A freestyle swimmer has shared her simple recipe for ‘millennial pink’ pasta, which is perhaps the ‘most Instagrammable’ dinner ever posted on social media.
Kirrily Edwards, a 20-year-old from Sydney who shares healthy recipes and exercise tips on her Instagram account, Kiz Active Life, makes the dish with pasta, tofu and beetroot which gives it a striking bubblegum colour.
She flavours the vegan-friendly meal with garlic, lemon, paprika and a dash of maple syrup.
Ms Edwards – who competes for New South Wales in 200m and 400m freestyle races – said she saw a video of pink pasta on TikTok and knew she had to try it for herself.

She said she starts by cooking pasta in boiling water, then blends 200 grams of firm tofu with one teaspoon of paprika, one teaspoon of garlic, two tablespoons of maple syrup, one tablespoon of olive oil and the juice of one lemon in a food processor.
Ms Edwards said she drains the pasta and adds it to the sauce along with some pasta water, then leaves the mixture to simmer for five minutes – it’s that simple.
Her recipe, which has racked up 1,410 ‘likes’ since it was shared online on May 26, has drawn dozens of delighted responses.
‘This looks so good,’ one person replied.
‘Amazing, love the colour,’ added another.

Ms Edwards is building an online presence by encouraging young women to adopt a balanced approach to diet and fitness, showing followers that you can enjoy everything in moderation.
In a recent YouTube video, she showed her 1,350 subscribers what she eats in a day to fuel her body through double two-hour swimming sessions and 45 minutes of boxing and bodyweight training.
Ms Edwards said she eats three main meals and three substantial snacks, with dishes including protein oats, veggie burgers, egg sandwiches and fruit salads.

Speaking about the video, Ms Edwards told Daily Mail Australia that being healthy doesn’t mean you need to deprive yourself of the food you love.
‘It’s so important to nourish yourself with nutritious foods to feel energised, but it’s also important to eat foods that you enjoy,’ she said.
‘All foods can be included in a healthy lifestyle, it’s all about balance and moderation, not restriction!’
