A chef has shared her ‘game-changing’ recipe for a healthier alternative to traditional gnocchi.

Eva, a trainee recipe creator who lives in Amsterdam, makes the iconic Italian dish with cauliflower instead of potato so that it is lower in calories.

The 22-year-old, who shares simple recipes on Instagram as TheStdntChef, flavours the gnocchi with garlic, onion, pesto and Parmesan cheese.

What is gnocchi?

Gnocchi are a varied family of dumpling in Italian cuisine. 

They are made of small lumps of dough typically composed of semolina, flour, egg, potato, breadcrumbs or cornmeal.

‘This recipe is a game changer, I’m not gonna lie, I ate two portions of it yesterday,’ Eva wrote.

She added: ‘The gnocchi is baked in pesto to give it more flavour.’

A photo of the cauliflower gnocchi, which has racked up 1,129 ‘likes’ since it was uploaded online on Saturday, quickly drew delighted responses.

‘This is all I want right now,’ one woman replied.

‘Omg yesss I need this! I def have to make this ASAP,’ said a second, while a third added: ‘Okay need to try,’

Others tagged their friends, saying the dish looked ‘so insanely good’.

To make the gnocchi, Eva said she cooks 800 grams of cauliflower rice for five to 10 minutes until it is soft.

She allows it to drain and squeezes any excess water with a kitchen towel. 

Eva’s recipe for healthy cauliflower gnocchi

Ingredients

800g cauliflower rice

50-80g whole-wheat flour (depending on the texture of the cauliflower)

2 tsp basil pesto

Handful of grated parmesan

To season: garlic powder, onion powder, Italian herbs, salt and pepper

Method

1. Cook the cauliflower rice for 5-10 minutes. Ensure it is soft.

2. Let it drain and squeeze water out with a kitchen towel.

3. Add 50g of flour plus seasoning. Check if the dough feels thick enough, if not, add more flour.

4. Spoon 1-2 tsp of pesto and a little bit of oil in a frying pan, then fry the gnocchi.

5. Let the gnocchi rest on a paper towel so it absorbs the oil.

6. Add lots of Parmesan on top, a little bit of salt and some more pesto.

Next, Eva said she adds 50 grams of sugar plus a mixture of seasoning including garlic powder, onion powder, salt and pepper and Italian herbs. 

She spoons two teaspoons of pre-made pesto along with a drop of oil into a frying pan, then fries the gnocchi until it turns golden brown.

Eva said she rests the gnocchi on a paper towel until it absorbs the remaining oil, then covers it with a generous sprinkling of grated parmesan and some more pesto before serving it warm.
