A leading dietitian has shared her favourite ‘working from home lunch’, and she promises it will keep you full till dinnertime thanks to the perfect macronutrient combination.

Susie Burrell, from Sydney, loves to make avocado boats – or an avocado halved and stuffed with salad and vegetables.

She said not only is this a nutritious and cheap option while avocados only cost $1, but there is research around why eating half an avocado in the middle of the day helps with your hunger pangs throughout the afternoon.

‘Avocado boats are one of my favourite work from home lunches, especially when avocados are only $1 each,’ Susie wrote on Instagram.

This lunch is nutritious and budget-friendly. The key is to use half an avocado if it’s a big one and load up your mix with plenty of salad and veggies.’

Susie added: ‘Research has shown that eating half an avocado at lunch helps those wanting to lose weight by managing their hunger all afternoon.’

How to make Susie Burrell’s avocado boats 

INGREDIENTS

One small or half a medium avocado, halved and with the middle scooped out and mashed

One small can of tuna or salmon or half a cup of cottage cheese

130 gram can of four beans or sweetcorn

One tablespoon of mayonnaise or pesto

Half a tomato, chopped

One cup of mixed leaves

Two teaspoons of balsamic vinegar

METHOD 

1. Mash together the avocado, tuna/salmon/cottage cheese and corn/bean mix with pesto or mayonnaise.

2. Scoop back into the avocado and serve with side salad.

To make the avocado boats, Susie recommends you use something like one small or half a big avocado, scooped out and mashed.

You should then fill it with a small can of tuna or salmon, or half a cup of cottage cheese.

Add a 130 gram can of four bean mix or sweetcorn, one tablespoon of mayonnaise or pesto, half a tomato and some mixed leaves.

Susie recommends finishing with two teaspoons of balsamic vinegar to add flavour.

Thousands who saw the dish were impressed and said they would certainly be adding it to their ‘WFH repertoire’.

This isn’t the first work from home lunch Susie has shared with her followers.

The dietitian also said she is a fan of mixing up her leftovers for a day of work.
